| Grass Fed Beef info | In the winter of 2005 I started planning how I could work with the land at Cold Spring Ranch to produce high quality grass fed and finished beef. Establishing systems for replenishing the soil nutrients and building movable fencing for pasture rotation were my first priorities. At that time and for the previous 10 years, the land had been hayed every year and grazed with a limited number of livestock. Before that, between the 1950's up until the mid 1990's, Cold Spring Ranch had been a dairy called Gilman Farm, milking from 35 to 60 cows. Prior to its dairying days, from 1880 up to the 1950's, Cold Spring Ranch had been operated as a diverse livestock operation with a dairy barn, chicken barn, beef/sheep barn, along with other livestock as well. At its high point, Cold Spring Ranch included approximately 1600 acres and operated out of at least three separate barn sites. |

| Restaurants and Stores | Currently I operate Cold Spring Ranch to offer the highest quality grass fed and grass finished beef I can produce. I manage the 240 acres of pastures and woodlands in an environmentally friendly manner with the belief that the healthier the fields, the better the beef will be. I hope you enjoy our beef as much as I enjoy raising it and join me in supporting local agriculture by eating as a locavore. |
